Happy Friday!! Here are some highlights from what I cooked at home this week. First week back from vacation and I felt really inspired to cook. I enjoy cooking for my fam when I can & we had lots of fresh ingredients to use up in the house. This summer I want to learn more about eating seasonally and figure out some basic meals I can prep weekly for myself next sem in Boston. Scroll for some meal inspo!
1. Beet & arugula salad
white nectarines, cherry tomatoes, avocado & goat cheese w/ tangerine balsamic

2. Salmon sheet pan meal
chili lime seasoning, sweet potatoes & broccoli

3. Ahi poke bowls
arugula, edamame, cucumber, avocado, mango & siracha

4. Elevated avocado toast
egg, arugula, strawberries, goat cheese, & balsamic

5. Morning glory muffins
zucchini, carrot, apple & dates as mix ins – delish. I loosely followed the recipe but w/ baking I always end up modifying things.

6. Yogurt bowl
my go to in the morning. greek yogurt, banana, homemade muffin, almonds, nuttzo nut butter, cinnamon.

7. Coconut chickpea curry
roasted sweet potatoes, broccoli & brown rice. I did mess this up w/ the wrong measurements but I love that it makes a large amount and it still turned out delish.

8. Sweet potato breakfast bowl
poached eggs, arugula, roasted sweet potato & broccoli, cherry tomatoes, beets, micro greens
